God bless her soul, when life hands you mayonnaise, make chicken sandwiches.
Better yet, I'd challenge one of Washington's millionaires to fund "Rachael's Chicken". Get her to Culinary school, and sell everything chicken. Charge more for the white meat/dark meat sandwiches, create stick logos of her and a chicken and rule the chicken sandwich/chili world. It would not be hard to do better than Chick-Fil- A, or Ezel's, and she's already got the publicity. Start small in Spokane and grow baby. Could she get crowd-funding(?) who knows.
